Mix together the oats, nuts and coconut in a large bowl.
Put the sugar, oil, honey and maple syrup into a Pyrex jug and melt in the microwave for 2 minutes.
Remove and stir until all the sugar is melted.
Add the vanilla, salt and cinnamon and stir until it is all combined.
Now add the melted sugars to the grains and mix until everything is coated.
Line 2 large baking sheets with parchment paper and spread the granola between them.
Bake at 325' for 23 minutes or until the granola is golden.
Stir the granola when it comes out of the oven to break it up before cooling. Alernatively you can leave it and break it into larger peices once it is cool.
Allow it to cool completely and then store it in airtight jars.
